Unfortunately the <span id=\"GRmark_f327ef4a30bf80c925c583eaba6e144e01f61c3a_paste:0\"><span class=\"GRcorrect\" id=\"GRmark_f327ef4a30bf80c925c583eaba6e144e01f61c3a_paste:0\">paste<\/span><\/span> that gives it its <span id=\"GRmark_f327ef4a30bf80c925c583eaba6e144e01f61c3a_flavour:1\"><span class=\"GRcorrect\" id=\"GRmark_f327ef4a30bf80c925c583eaba6e144e01f61c3a_flavour:1\">flavour<\/span><\/span> and spice is a little hard to come by in many countries. I buy Hogans <span id=\"GRmark_fb40c6f4807acf6b86ccd594255286584f162a64_laksa:0\"><span class=\"GRcorrect\" id=\"GRmark_fb40c6f4807acf6b86ccd594255286584f162a64_laksa:0\">laksa<\/span><\/span> paste from Australia (and always stock up when I\u2019m home) but there are other brands that are fine to use as well. If you can&#8217;t find it anywhere (and make sure you ask at your local Asian supermarket) you can use green curry paste. The taste is not quite the same, but still works. <span id=\"GRmark_498685d92d219f98fcd8a0bf1546e171f209a63a_Laksa:0\"><span class=\"GRcorrect\" id=\"GRmark_498685d92d219f98fcd8a0bf1546e171f209a63a_Laksa:0\">Laksa<\/span><\/span> comes from Malaysia and Singapore, with many different recipes depending on the region it comes from. I use chicken, but that\u2019s because I don\u2019t eat shellfish. You can replace the chicken with prawns or other shellfish if you wish.<\/p>\n<p>If you can\u2019t find <span class=\"GRspelling\">laksa<\/span> paste anywhere and don\u2019t want to use green curry paste, here\u2019s a different recipe that includes how to <a href=\"http:\/\/gourmettraveller.com.au\/spicy_chicken_laksa.htm\" target=\"_blank\">make your own <span class=\"GRspelling\">laksa<\/span> paste<\/a>.<br \/>\n<!--more--><\/p>\n<p>Here\u2019s my recipe, which makes two large serves or three smaller ones. Just add more of everything to serve more people:<\/p>\n<p><b>Ingredients:<\/b><\/p>\n<p>2 chicken breasts or thigh fillets<\/p>\n<p>1 can coconut milk<\/p>\n<p>1 can water<\/p>\n<p>2 or more tbsp of <span class=\"GRcorrect\" id=\"GRmark_7f85e4c48151794b911b0f096c2cc702a5399108_laksa:0\">laksa<\/span> paste<\/p>\n<p>1 small onion<\/p>\n<p>2-3 spring onions, a handful of sliced button mushrooms, bean sprouts and any other <span class=\"GRcorrect\" id=\"GRmark_615b540a2ec857082cea36def8235c03833a479c_asian:0\">asian<\/span> vegetables that will cook easily (you could try baby corn, sliced water chestnuts, <span class=\"GRcorrect\" id=\"GRmark_615b540a2ec857082cea36def8235c03833a479c_chinese:1\">chinese<\/span> cabbage, tofu or <span class=\"GRcorrect\" id=\"GRmark_615b540a2ec857082cea36def8235c03833a479c_snowpeas:2\">snowpeas<\/span>)<\/p>\n<p>1 chicken stock cube or 1 tbsp concentrated liquid chicken stock<\/p>\n<p>1 packet of Hokkien or other egg noodles<\/p>\n<p><span class=\"GRcorrect\" id=\"GRmark_efd81f487be8771651fe10720d3c3036ebbedae4_salt:0\">salt<\/span> and pepper to taste<\/p>\n<p><b>Method:<\/b><\/p>\n<p>Slice the chicken into thin pieces and toss in salt and pepper. Pan or wok fry the chicken pieces until they\u2019re browned on the outside and cooked through. Set aside in a warm place.<\/p>\n<p>In a saucepan, bring the coconut milk and water to the boil, then reduce to a simmer. Add the laksa paste, halved and sliced onion and chicken stock and simmer until the onion is cooked. Add more <span class=\"GRcorrect\" id=\"GRmark_5a771d6ae3e3e2cb9622894ff55f9688054436f5_laksa:0\">laksa<\/span> paste and possibly a little salt to taste.<\/p>\n<p>Cook the noodles as per the packet instructions, then drain them and set them in deep bowls. Place the fried chicken on top of the noodles, and then add the various vegetables. Sprinkle the sliced spring onion and fresh chopped coriander over the vegetables and then pour the soup over the top. Make sure you have as much <span class=\"GRcorrect\" id=\"GRmark_ec8223dd1fcacc4388c2b642a7e7a1f2fe2845f5_soup:0\">soup<\/span> in the bowl as will almost cover the contents so that the vegetables wilt slightly. You can add a sprinkle more coriander after the <span class=\"GRcorrect\" id=\"GRmark_e2846260588aa2014b58ea8cff8de229996bf5a0_soup:0\">soup<\/span> goes in.<\/p>\n<p>Serve immediately.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Laksa is a spicy coconut noodle soup, and it is\u00a0one of my favourite Asian soups.
